Peppermint Candy Cookies

This is a cookie recipe from Martha Stewart Living magazine. I tested it in a cooking class and it was great. I thought it would be neat to make candy cane shaped cookies, so I did and they turned out really good. The secret to getting the peppermint to stay on the cookie and not melt out into the pan is to roll only the top of the cookie in the crushed peppermint. Be careful to use a light coating of candy for just the right flavors.

Pecan and Caramel Cake with Cream Cheese Frosting

What a beautiful cake this is and it tastes as good as it looks. But guess what? It is not that difficult to make. I used a yellow butter boxed cake mix and a few extra ingredients to make it rich and delicious.

The recipe makes 3 round cakes each layered with caramel sauce. You could make the cake in a Bundt pan, just pour the caramel sauce over the cake after it cools. Then wait about 20 minutes and frost the cake.

Old Fashioned Apple Cobbler

My mom taught me how to make apple cobbler. Growing up we ate very few sweets probably because my dad is a dentist. But he has apple trees so I guess as long as there was fruit in the dessert it was considered healthy :o))

The secret is to get a good golden crust on top made possible by the sugar in the batter. Push the apples down under the batter so they don't burn on top. Cover with a little sheet of foil if the apples begin browning too quickly.

This was one of our recipes in my recent Family Heirloom cooking class at the UT culinary institute.

Grilled Peaches, Pineapple and Pears with Gorgonzola Sauce served over Quinoa

Wow, this turned out good if I do say so myself. I got the idea for this recipe from my friend Penny. She made a roasted grape pizza with gorgonzola, walnuts and honey. So I made a few changes and it was really good. This was one of the recipes I shared at my Glass Bazaar cooking class this week.


Since I couldn't find good peaches this time of year, I substituted and used grapes. I also wanted this to be used as a complete meal with protein so I added Quinoa. I've always liked quinoa but now I love it. I am having it for breakfast on a regular basis fixed like this....

My Favorite Christmas cookies

My mom always baked cookies for the holidays and so did my husband's mom. He has his favorites and I have mine, now we have our favorites together. Every year I bake cookies adding a little of his and a little of mine to create sweet memories for us both.

I decided to extend this tradition and start one with my friends. For our annual Scuba diving club Christmas party, everyone was asked to bring 2 dozen of their favorite cookie for a cookie swap. It was a hit and now I have a few new favorite recipes.

Campari Poached Pears with Raspberry Sauce topped off with Mascarpone

The pears will absorb the color from the cranberry juice turning the pears a rose color. Be sure and plan ahead so your pears will be ripe. They should give slightly when pressed. If they are hard and under ripe the end result will not be pleasing.

In class a few of the students found this out when their pears took forever to soften; a few never did. I wish those pears had been purchased a few days earlier. But they were beautiful.

This Wine and Food Pairing was such a hit at our last Wine Club dinner that I thought I would share it with everyone else.
