UT Cooking Class, Comfort Foods

Comfort food in August?? Well it was a hit and the food was delicious. The class participants perfected my recipes and we all enjoyed a wonderful meal.

Thanks guys for your enthusiasm. It was a great class.

Amaretto Apricot Flan

This is a delicious dessert that can be enjoyed anytime since it uses canned apricots. Try it over the holidays with a medium bodied dessert wine. You can easily convert this recipe into a Kahlua flan, see below.

Pineapple Lime Pie

This is a very tropical, light dessert, great for back yard barbeques or summer parties. The ingredients remind me of a delicious rum drink I had in Bonaire several years ago. The ingredinets included coconut rum, pineapple juice, lime juice and ice.

Apple Streusel Pie

My mom gave me this recipe while I was in highschool over 30 years ago. She wrote a note on the card stating that she won first place with the pie in a contest she entered. So it must be fantastic. You can easily make mini pies with this recipe, they make a great presentation. Top with whipped cream using a pastry bag with a star tip.
