Home Made Pasta Making 101

You may ask why should I spend all that time making pasta. I can tell you why- it is so much better than boxed dried pasta. Fresh is always better! And YES it does take time but it is easy and actually fun. At least that is what the class participants told me at our recent pasta making class at UTK.

Chef Walter Lambert joined us and he provided instruction for the best pasta sauces ever. Just the right accompaniment for the pasta.

There are so many pasta shapes from big to small, fat and skinny. We made Tagliatelle and Pappardelle and stuffed tortellini pasta.

Dennis’s Macaroni and Cheese

While looking for the perfect macaroni and cheese recipe it became apparent that there are about 20 great recipes. So Dennis took a few that looked really good, combined, switched and added to until he came up with his favorite version. It was the best macaroni and cheese ever.

Tortellini in a Parmesan Cream Sauce

It amazes me how flavors come together to create a delicious recipe. I wanted a creamy sauce without all the calories so I used chicken broth as the base as in my Afredo sauce but this is even richer.

Evaporated milk is used to give it a creamy texture, providing only 2 grams of fat/serving.

Chicken and Vegetable Lasagna with Goat Cheese Sauce

Use what you have in the refrigerator and freezer. Running to the store every time you decide to cook will end up costing you more than you think. I keep several staples available, both canned and frozen. I froze bell peppers and basil pesto from the garden this past summer and I always have fresh vegetables and onions. I also keep several kinds of cheese on hand.
